Ingredients
For the Momos Dough:
- 2 cups all-purpose flour
- 1/2 teaspoon salt
- Water (as needed)
For the Momos Filling:
- 1 cup finely chopped cabbage
- 1/2 cup grated carrots
- 1/2 cup finely chopped onions
- 1/4 cup finely chopped capsicum (bell peppers)
- 1/4 cup finely chopped mushrooms (optional)
- 2 tablespoons finely chopped garlic
- 1 tablespoon finely chopped ginger
- 1 tablespoon soy sauce
- Salt to taste
- Black pepper to taste
- 2 tablespoons oil
For the Gravy:
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 tablespoon finely chopped garlic
- 1 tablespoon finely chopped ginger
- 1/2 cup finely chopped onions
- 1 cup finely chopped tomatoes
- 1/2 cup tomato puree
- 1 teaspoon red chili powder
- 1 teaspoon turmeric powder
- 1 teaspoon garam masala
- 2 tablespoons soy sauce
- 1 tablespoon vinegar

- 2 cups water or vegetable stock
- 1 tablespoon cornflour mixed with 2 tablespoons water (for thickening)
- Fresh coriander leaves for garnish

1. Prepare the Dough:
- In a large mixing bowl, combine the all-purpose flour and salt.
- Gradually add water and knead to form a smooth and pliable dough. Cover the dough with a damp cloth and let it rest for about 30 minutes.
2. Prepare the Filling:
- Heat oil in a pan over medium heat. Add chopped garlic and ginger, sauté until fragrant.
- Add onions and sauté until translucent.
- Add the chopped vegetables (cabbage, carrots, capsicum, mushrooms) and cook for 5-7 minutes until they are soft.
- Stir in soy sauce, salt, and black pepper. Mix well and cook for another 2 minutes. Remove from heat and let the mixture cool.
3. Assemble the Momos:
- Divide the dough into small equal-sized balls.
- Roll each ball into a thin circle (about 3-4 inches in diameter).
- Place a spoonful of the filling in the center of each circle.
- Fold the edges and pleat them to seal the momos. Repeat the process with the remaining dough and filling.
4. Steam the Momos:
- Grease a steamer tray with a little oil to prevent the momos from sticking.
- Place the momos on the tray, ensuring they don’t touch each other.

- Pour in the water or vegetable stock and bring the mixture to a boil.
- Add the cornflour slurry and cook until the gravy thickens to the desired consistency.

- Add the steamed momos to the gravy and gently mix to coat them well.
- Cook for another 2-3 minutes to allow the momos to absorb the flavors of the gravy.
