Ingredients
For the Spice Mix (Kadai Masala)
- 1 tablespoon coriander seeds
- 1 tablespoon cumin seeds
- 3-4 dried red chilies
- 1 teaspoon fennel seeds
- 1 teaspoon black peppercorns
- 1 small cinnamon stick
- 2-3 cloves
For the Gravy
- 2 tablespoons oil
- 1 teaspoon cumin seeds
- 1 large onion, finely chopped
- 1 tablespoon ginger-garlic paste
- 2 medium tomatoes, finely chopped
- 1 green bell pepper (capsicum), diced
- 200 grams mushrooms, cleaned and sliced
- 1 teaspoon turmeric powder
- 1 teaspoon red chili powder
- 1 teaspoon garam masala
- Salt to taste
- 2 tablespoons fresh cream (optional)
- Fresh coriander leaves for garnish
Instructions
Preparing the Kadai Masala
- Roast the Spices: In a dry pan, roast coriander seeds, cumin seeds, dried red chilies, fennel seeds, black peppercorns, cinnamon stick, and cloves over medium heat until they become fragrant. Be careful not to burn them.
- Grind the Spices: Once cooled, grind the roasted spices into a coarse powder using a spice grinder or mortar and pestle. Set aside.
Making the Gravy
- Sauté the Onions: Heat oil in a kadai or a large pan over medium heat. Add cumin seeds and let them splutter. Then add the chopped onions and sauté until they turn golden brown.
- Add Ginger-Garlic Paste: Stir in the ginger-garlic paste and cook for 1-2 minutes until the raw smell disappears.
- Cook the Tomatoes: Add the chopped tomatoes and cook until they turn soft and oil starts to separate from the mixture.
- Add Bell Pepper: Add the diced green bell pepper and cook for a few minutes until it softens slightly but still retains its crunch.
- Spice it Up: Add the ground kadai masala, turmeric powder, red chili powder, and salt. Mix well and cook for another 2-3 minutes.
Cooking the Mushrooms
- Add the Mushrooms: Add the sliced mushrooms to the pan and mix well to coat them with the spices. Cook for about 5-7 minutes until the mushrooms are tender and cooked through.
- Finishing Touch: Stir in the garam masala and fresh cream (if using). Cook for an additional 2 minutes, allowing the flavors to meld together.
Serving
- Garnish: Garnish with freshly chopped coriander leaves.
- Serve Hot: Serve the Kadai Mushroom hot with roti, naan, or steamed rice.
