Ingredients

- 2 tablespoons oil or ghee

- 8-10 curry leaves
- 2 green chilies, slit
- 1 large tomato, chopped
- 1-inch piece ginger, grated
- 4 cups water
- Fresh coriander leaves, chopped (for garnish)
- Lemon juice (optional)

- 1 cup whole wheat flour
- 2 tablespoons chickpea flour (besan)
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder
- 1/2 teaspoon carom seeds (ajwain)
- 2 tablespoons oil
- Salt to taste
- Water (as needed to knead the dough)
Instructions
Step 1: Prepare the Dal
- Cook the Toor Dal: Rinse the toor dal under running water until the water runs clear. In a pressure cooker, add the rinsed dal, peanuts, turmeric powder, and 4 cups of water. Cook until the dal is soft and mushy, usually for 4-5 whistles. Let the pressure release naturally.
- Make the Tadka (Tempering): In a large pot, heat the oil or ghee over medium heat. Add mustard seeds and cumin seeds. When they start to splutter, add asafoetida, curry leaves, and green chilies. Sauté for a minute.
- Cook with Spices: Add the grated ginger and chopped tomatoes to the pot. Cook until the tomatoes soften. Then, add red chili powder, tamarind paste, jaggery, and salt. Mix well and cook for another 2-3 minutes.
- Combine and Simmer: Add the cooked dal to the pot and mix well. Adjust the consistency by adding water if needed. Bring to a gentle boil, then reduce the heat and let it simmer while you prepare the dhokli.
Step 2: Prepare the Dhokli
- Knead the Dough: In a mixing bowl, combine whole wheat flour, chickpea flour, turmeric powder, red chili powder, carom seeds, oil, and salt. Add water little by little and knead into a firm dough. Cover and let it rest for 10-15 minutes.
- Roll and Cut the Dhokli: Divide the dough into smaller portions. Roll each portion into a thin circle (about 1/8 inch thick). Cut the rolled dough into diamond or square shapes using a knife or pizza cutter.
Step 3: Combine and Cook
- Add Dhokli to Dal: Gradually add the dhokli pieces to the simmering dal. Stir gently to prevent the pieces from sticking together.
- Cook Until Done: Let the dal simmer on low heat for about 15-20 minutes, stirring occasionally. The dhokli should cook through and become soft.
- Adjust Seasoning: Taste and adjust the seasoning, adding more salt, jaggery, or tamarind if needed. If the dal thickens too much, add a little water to achieve the desired consistency.
Step 4: Serve
- Garnish: Garnish the dal dhokli with fresh coriander leaves and a squeeze of lemon juice if desired.
