Ingredients:
- 1 cup basmati rice (or any long-grain rice)

- 1 teaspoon split urad dal (black gram dal)
- 1 teaspoon chana dal (split chickpeas)
- 8-10 curry leaves
- 2-3 green chilies, slit lengthwise
- 1/4 teaspoon asafoetida (hing)
- 1/2 teaspoon turmeric powder
- Salt to taste
- 2 tablespoons lemon juice (adjust according to taste)
- 2 tablespoons chopped cilantro (coriander leaves), for garnish
- Optional: 2 tablespoons roasted peanuts or cashews (for added crunch)
Instructions:
- Cooking Rice:
- Rinse the rice thoroughly under running water until the water runs clear. This removes excess starch.
- Cook the rice in a pot with 2 cups of water. Bring to a boil, then reduce the heat to low, cover, and cook for about 15-20 minutes until the rice is tender and all the water is absorbed. Fluff the rice with a fork and let it cool slightly.
- Tempering:
- Heat vegetable oil in a large skillet or pan over medium heat.
- Add mustard seeds and let them splutter. Then add urad dal and chana dal. Stir and fry until they turn golden brown.
- Adding Flavors:
- Add curry leaves, green chilies, and asafoetida. Sauté for a minute until fragrant.
- Mixing Spices:
- Stir in turmeric powder and salt. Mix well to combine with the tempering.
