- 2 tablespoons chopped almonds
- 2 tablespoons chopped pistachios
Instructions:
- Preparation:
- Wash and peel the carrots. Grate them using a fine grater or food processor.
- Set aside the grated carrots and prepare the nuts and raisins for garnishing.
- Cooking the Carrots:
- In a heavy-bottomed pan or kadai, add the grated carrots.
- Pour in the full-fat milk and mix well.
- Turn the heat to medium and bring the mixture to a boil.
- Once it starts boiling, reduce the heat to low and let it simmer. Stir occasionally to prevent the mixture from sticking to the bottom of the pan.
- Continue to cook until the milk reduces and thickens, and the carrots are fully cooked. This may take about 45 minutes to 1 hour.
- Adding Sugar and Ghee:
- When the milk has almost evaporated and the mixture is thick, add the sugar. Mix well.
- The sugar will release some moisture, so continue to cook until the mixture dries up again.
