Ingredients:
- Mushrooms: 300 grams, cleaned and sliced
- Capsicum (Bell Pepper): 1 large, diced
- Onion: 1 large, diced
- Green chilies: 2-3, slit
- Garlic: 5 cloves, finely chopped
- Ginger: 1 inch piece, finely chopped
- Soy sauce: 2 tablespoons
- Tomato ketchup: 2 tablespoons
- Red chili sauce: 1 tablespoon
- Vinegar: 1 teaspoon
- Cornflour: 2 tablespoons
- Spring onions: A few, chopped for garnishing
- Salt: to taste
- Pepper: 1 teaspoon
- Oil: for cooking
Instructions:
- Prepare the Mushrooms:
- In a bowl, mix the sliced mushrooms with 1 tablespoon cornflour, a pinch of salt, and pepper. Ensure each piece is evenly coated. This coating helps in giving the mushrooms a slight crunch after frying.
- Heat oil in a pan over medium heat and shallow fry the mushrooms until golden brown. Remove and set aside on paper towels to drain excess oil.
- Make the Sauce:
- In the same pan, add a little more oil if needed, and sauté the chopped garlic and ginger until aromatic.
- Add the chopped onions and green chilies. Sauté until the onions turn slightly translucent.
- Introduce the diced capsicum, stir well, and cook for about 2-3 minutes, maintaining some of the crunch.
- Combine Everything:
- Reduce the flame to low and add soy sauce, tomato ketchup, and red chili sauce to the pan. Mix well.
- Add a dash of vinegar to balance the flavors.
- Dissolve the remaining 1 tablespoon of cornflour in a small bowl with ¼ cup water and pour this slurry into the pan. This will help thicken the sauce.
- Return the fried mushrooms to the pan. Toss everything together so that the mushrooms are well coated with the sauce. Cook for another 2-3 minutes.
- Garnish and Serve:
- Check the seasoning, adding more salt or pepper if needed.
- Garnish with chopped spring onions before serving.
