Chili Mushroom: A Spicy Delight for Veggie Lovers

Chili mushroom is an Indo-Chinese fusion dish that’s beloved for its fiery taste and umami-rich mushrooms. It’s a fantastic choice for anyone wanting to whip up something quick, spicy, and satisfying. Whether served as a starter or as a main accompanied by fried rice or noodles, chili mushroom impresses with its bold flavors and simple preparation.

Here’s how you can make chili mushroom at home:

Ingredients:

  • Mushrooms: 300 grams, cleaned and sliced
  • Capsicum (Bell Pepper): 1 large, diced
  • Onion: 1 large, diced
  • Green chilies: 2-3, slit
  • Garlic: 5 cloves, finely chopped
  • Ginger: 1 inch piece, finely chopped
  • Soy sauce: 2 tablespoons
  • Tomato ketchup: 2 tablespoons
  • Red chili sauce: 1 tablespoon
  • Vinegar: 1 teaspoon
  • Cornflour: 2 tablespoons
  • Spring onions: A few, chopped for garnishing
  • Salt: to taste
  • Pepper: 1 teaspoon
  • Oil: for cooking

Instructions:

  1. Prepare the Mushrooms:
  • In a bowl, mix the sliced mushrooms with 1 tablespoon cornflour, a pinch of salt, and pepper. Ensure each piece is evenly coated. This coating helps in giving the mushrooms a slight crunch after frying.
  • Heat oil in a pan over medium heat and shallow fry the mushrooms until golden brown. Remove and set aside on paper towels to drain excess oil.
  1. Make the Sauce:
  • In the same pan, add a little more oil if needed, and sauté the chopped garlic and ginger until aromatic.
  • Add the chopped onions and green chilies. Sauté until the onions turn slightly translucent.
  • Introduce the diced capsicum, stir well, and cook for about 2-3 minutes, maintaining some of the crunch.
  1. Combine Everything:
  • Reduce the flame to low and add soy sauce, tomato ketchup, and red chili sauce to the pan. Mix well.
  • Add a dash of vinegar to balance the flavors.
  • Dissolve the remaining 1 tablespoon of cornflour in a small bowl with ¼ cup water and pour this slurry into the pan. This will help thicken the sauce.
  • Return the fried mushrooms to the pan. Toss everything together so that the mushrooms are well coated with the sauce. Cook for another 2-3 minutes.
  1. Garnish and Serve:
  • Check the seasoning, adding more salt or pepper if needed.
  • Garnish with chopped spring onions before serving.

Serve your chili mushroom hot as an appetizer or pair it with rice or noodles for a more filling meal. Its spicy, tangy, and slightly sweet flavors are a delight for the taste buds, making it a popular choice in both home kitchens and restaurants. Enjoy this delicious dish with friends or family and watch it become a new favorite!
