Basket chaat, also known as tokri chaat, is a popular Indian street food that combines a medley of flavors and textures in an edible basket. This delicious snack features crispy potato baskets filled with a variety of tangy, spicy, and sweet ingredients, making it a perfect appetizer or party snack. Here’s how you can make basket chaat at home.

Ingredients
For the Potato Baskets (Tokri):
- 4 large potatoes, peeled
- Oil for deep frying
- Salt to taste
For the Chaat Filling:
- 1 cup boiled chickpeas (chole)
- 1 cup boiled and cubed potatoes
- 1 cup finely chopped onions
- 1 cup finely chopped tomatoes
- 1 cup boiled and sprouted moong beans (optional)
- 1/2 cup pomegranate seeds
- 1/2 cup chopped fresh coriander leaves
- 1-2 green chilies, finely chopped (optional)
- 1 cup sev (crunchy chickpea flour noodles)
- 1 cup plain yogurt, whisked
- 1/2 cup tamarind chutney
- 1/2 cup green chutney (mint-coriander chutney)
- 1 teaspoon chaat masala
- 1 teaspoon roasted cumin powder
- Salt to taste
- Red chili powder to taste
Instructions
Step 1: Preparing the Potato Baskets
- Grate the Potatoes: Grate the peeled potatoes using a large-holed grater. Rinse the grated potatoes under cold water to remove excess starch, then drain and pat them dry with a clean kitchen towel.
- Shape the Baskets: Lightly grease a metal tea strainer or a basket mold with oil. Place a portion of the grated potatoes in the strainer, pressing down to shape it into a basket. Cover it with another smaller strainer or mold to hold the shape.
- Fry the Baskets: Heat oil in a deep frying pan over medium heat. Once the oil is hot, carefully lower the strainer with the potatoes into the oil. Fry until the basket turns golden and crispy, about 4-5 minutes. Remove from the oil and drain on paper towels. Repeat with the remaining grated potatoes.
- Season the Baskets: Sprinkle a pinch of salt over the fried baskets while they are still hot.
Step 2: Preparing the Chaat Filling
- Assemble the Ingredients: In a large mixing bowl, combine the boiled chickpeas, boiled potatoes, chopped onions, tomatoes, and sprouted moong beans (if using).
- Add the Chutneys: Add the tamarind chutney and green chutney to the mixture. Adjust the quantity of chutneys to suit your taste.
- Season the Filling: Sprinkle chaat masala, roasted cumin powder, salt, and red chili powder over the mixture. Mix well to combine all the flavors.
- Prepare the Yogurt: Whisk the plain yogurt until smooth. Add a pinch of salt and a little sugar if you prefer a slightly sweet taste.
Step 3: Assembling the Basket Chaat
- Fill the Baskets: Just before serving, fill each potato basket with a generous amount of the prepared chaat filling.
- Add Toppings: Drizzle some whisked yogurt over the top. Sprinkle sev, pomegranate seeds, chopped coriander leaves, and finely chopped green chilies.
- Final Touch: Add a final drizzle of tamarind chutney and green chutney for an extra burst of flavor.
Step 4: Serving
Serve the basket chaat immediately to enjoy the crispiness of the potato baskets combined with the tangy, spicy, and sweet flavors of the filling. This delightful snack is sure to be a hit at any gathering or as an evening treat.
Tips
- Make Ahead: You can prepare the potato baskets ahead of time and store them in an airtight container. Assemble the chaat just before serving.
- Customization: Feel free to customize the filling with your favorite ingredients like boiled corn, diced cucumber, or grated carrots.
- Healthy Twist: For a healthier version, you can bake the potato baskets instead of frying them. Brush them with oil and bake at 400°F (200°C) until golden and crispy.
Basket chaat is a perfect example of how creative and versatile Indian street food can be. With its delightful combination of flavors and textures, it’s sure to become a favorite in your culinary repertoire. Enjoy!
