- 2 teaspoons coriander powder
- 1 teaspoon cumin powder
- 1 teaspoon garam masala

Cooking the Vegetables:
- Blanch Vegetables: In a large pot, bring water to a boil. Add the cauliflower, carrots, potatoes, green beans, and green peas. Boil for 5-7 minutes until the vegetables are slightly tender. Drain and set aside.
Making the Curry:
- Heat Oil: In a large pan or wok, heat the cooking oil over medium heat.
- Add Seeds: Add cumin seeds and mustard seeds to the hot oil. Let them crackle for a few seconds.
