How to Make Puran Poli: A Delicious Indian Recipe

Puran Poli is a traditional Indian sweet flatbread that is popular in Maharashtra, Gujarat, and several other Indian states. It’s typically made during festivals like Holi and Diwali, and it’s loved for its sweet filling and soft, chewy texture. Here’s how you can make Puran Poli at home:

Ingredients:

For the Dough:

  • 1 cup whole wheat flour (atta)
  • A pinch of salt
  • Water, as needed

For the Filling (Puran):

  • 1 cup chana dal (split Bengal gram)
  • 1 cup jaggery (or sugar)
  • 1/2 tsp cardamom powder
  • 1/4 tsp nutmeg powder (optional)
  • 2 tbsp ghee (clarified butter)

Other:

  • Ghee or oil, for cooking the polis

Instructions:

1. Prepare the Dough:

  • In a large mixing bowl, combine the whole wheat flour and a pinch of salt.
  • Gradually add water and knead to form a smooth and pliable dough. Cover it with a damp cloth and set aside for 30 minutes.

2. Prepare the Filling (Puran):

  • Rinse the chana dal thoroughly and cook it in a pressure cooker with enough water until it is soft and cooked through (about 2-3 whistles).
  • Drain any excess water from the cooked dal and mash it well.
  • In a separate pan, melt the jaggery (or sugar) with a little water to form a syrup. Strain to remove impurities if using jaggery.
  • Add the mashed dal to the jaggery syrup along with cardamom powder, nutmeg powder (if using), and ghee.
  • Cook this mixture on medium heat, stirring continuously, until it thickens and comes together into a smooth, thick paste (puran). Remove from heat and let it cool.

3. Make the Puran Poli:

  • Divide the dough and the puran into equal-sized balls (slightly larger for the puran balls).
  • Take one portion of dough and roll it out into a small circle. Place one portion of puran in the center and bring the edges of the dough together to cover the puran completely.
  • Flatten the stuffed dough ball gently and roll it out into a circle (like a chapati), using dry flour to prevent sticking.
  • Heat a griddle (tava) over medium heat and cook the puran poli on both sides, applying ghee or oil, until golden brown spots appear.

4. Serve:

  • Serve Puran Poli hot with a dollop of ghee or enjoy it with milk or yogurt.

Tips:

  • Ensure that the puran (filling) is smooth and free of lumps for the best texture in the poli.
  • Adjust the sweetness according to your preference by adding more or less jaggery or sugar.
  • Puran Poli tastes best when served fresh and warm.

Puran Poli is not just a dish; it’s a cultural experience that brings families together during celebrations. Enjoy making and sharing this delightful treat with your loved ones!
