Ingredients
For the Dough:
- 2 cups whole wheat flour
- 1/2 teaspoon salt
- 1 tablespoon oil or ghee
- Water, as needed
For the Paneer Stuffing:
- 1 cup grated paneer (Indian cottage cheese)
- 1 small onion, finely chopped
- 1-2 green chilies, finely chopped (optional, for heat)
- 1 tablespoon finely chopped fresh coriander (cilantro)
- 1/2 teaspoon garam masala
- 1/2 teaspoon cumin powder
- 1/2 teaspoon coriander powder
- Salt, to taste

- Ghee or oil, as needed

Step 1: Prepare the Dough
- In a large mixing bowl, combine the whole wheat flour and salt.
- Add oil or ghee and mix well.
- Gradually add water, little by little, and knead the dough until it is smooth and pliable. The dough should be soft but not sticky.
- Cover the dough with a damp cloth and let it rest for at least 20-30 minutes.
Step 2: Make the Paneer Stuffing
- In a mixing bowl, combine the grated paneer, chopped onion, green chilies, fresh coriander, garam masala, cumin powder, coriander powder, and salt.
- Mix all the ingredients thoroughly until well combined. Set aside.
Step 3: Assemble the Parathas
- Divide the dough into equal-sized balls (about the size of a golf ball).
- Take one dough ball and roll it into a small disc, about 4-5 inches in diameter, using a rolling pin. Use a little dry flour to prevent sticking.
- Place a generous spoonful of the paneer stuffing in the center of the disc.
- Bring the edges of the dough together to enclose the stuffing completely, pinching the edges to seal.
- Gently flatten the stuffed dough ball with your hands, then roll it out again into a disc, about 6-7 inches in diameter. Be gentle to avoid the stuffing breaking out.
Step 4: Cook the Parathas
- Heat a tawa or skillet over medium-high heat.
- Once hot, place the rolled paratha on the tawa.
- Cook for 1-2 minutes or until bubbles start to form on the surface. Flip the paratha.
- Apply a little ghee or oil on the cooked side, then flip again after 1-2 minutes.
- Apply ghee or oil on the other side and cook until both sides are golden brown and crisp.
- Repeat the process for the remaining dough and stuffing.
Step 5: Serve
- Serve the stuffed paneer parathas hot with yogurt, pickle, or a side of fresh salad.
